Not Your Grandma's Green Bean Casserole

Ingredients
  

For the topping

  • 2 lbs grean beans - cut in half, trimmed & washed
  • 1 tbsp olive oil
  • 1 cup onions - finely diced
  • 1/2 cup breadcrumbs - seasoned
  • 1 tbsp Parmesan cheese - grated
  • 1/2 tsp thyme - dried (or 1 tsp fresh)

For the green beans

  • 1 tbsp olive oil
  • 1/3 cup onions - minced
  • 16 oz mushrooms - sliced
  • 1/4 cup flour
  • 1 cup reduced sodium chicken stock
  • 1 cup skim milk
  • 1/4 cup Parmesan cheese - grated

Instructions
 

  • Boil a large pot of water, when boiling add green beans and blanch for 2 minutes (or 6-8 minutes if you like them softer). Drain in a colander and rinse under cold water to stop them from cooking.
  • Meanwhile make the topping, heat a medium-sized skillet over medium heat. Add the onions and saute about 3-5 minutes, stirring occasionally until golden brown.
  • Reduce heat to medium-low, add breadcrumbs, grated cheese and thyme; saute until golden brown, about 5-6 minutes, stirring frequently, careful not to burn.
  • Preheat the oven to 375 degree F. Lightly spray a 13 x 9 inch baking dish.
  • Heat oil in a large saute pan over medium-high heat. Add onions and saute 1 to 2 minutes. Add mushrooms, season with salt and pepper and saute 6-8 minutes, stirring occasionally.
  • Sprinkle flour over the mushroom, stir constantly for about a minute, then slowly add chicken stock, then milk.
  • Bring to a low boil, and cook stirring occasionally until thickened, about 3 minutes. Stir in Parmesan cheese.
  • Add blanched green beans and mix well, season with salt and pepper as needed; pour into prepared baking dish.
  • Top with toasted bread crumbs and bake about 30 minutes.
  • Serve and enjoy!

Simple Cranberry Sauce

Ingredients
  

  • 12 oz fresh or frozen cranberries
  • 2 pears - peeled, cubed small
  • 1/4 cup honey
  • 1/2 cup water
  • 1/4 cup 100% orange juice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp orange zest - use 1 medium orange

Instructions
 

  • Wash your hands and clean your cooking area.
  • Rinse cranberries and discard any bad ones.
  • Rinse pears, peel and cut into small cubes.
  • In a medium saucepan combine cranberries, pears, water, and honey. Bring the mixture to a boil over medium-high heat, then reduce heat to medium-low and cook, stirring occasionally, until cranberries burst and the mixture has thickened to your liking, about 5 to 10 minutes.
  • Remove the pot from heat and stir in orange juice, cinnamon, and orange zest.
  • The sauce will continue to thicken as it cools. Store in refrigerator.
  • Enjoy!

Ingredients
  

  • 2 refrigerated pie crust
  • 6 cups apples - thinly sliced
  • 1/4 cup sugar
  • 1 1/2 tbsp flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp all spice
  • 1/4 tsp salt
  • 1 tbsp lemon juice

Instructions
 

  • Wash your hands, apples, and clean your cooking area.
  • Preheat oven to 425°F.
  • Peel and thinly slice apples.
  • In a large bowl, mix sliced apples and remaining ingredients.
  • Place 1 pie crust in an ungreased pie plate. Press firmly against the bottom and sides.
  • Add apple mixture to pie dish. Top with the second crust. Press pie crust edges together to seal.
  • Cut slits or shapes in several places in the top crust.
  • Bake for 40-45 mins or until apples are soft and crust is golden brown. Cover edge of crust with 2-3 inch wide foil strips for 15-20 minutes to prevent the edges from burning.
  • Let the pie cool for at least 2 hours before serving. The filling will thicken as it cools.
  • Enjoy!!

Ingredients
  

  • 1 cup chopped onion
  • 2 cups frozen broccoli - defrosted
  • 1 cup low-fat or fat-free milk
  • 1/4 tsp black pepper
  • 1 1/4 cups reduced fat cheddar cheese - shredded
  • 4 cups cooked 100% whoe wheat pasta

Instructions
 

  • Wash your hands and clean your cooking area.
  • Spray a large non-stick skillet evenly with non-stick cooking spray.
  • Add onions. Cook on medium until soft.
  • Add broccoli. Cook for 3 minutes.
  • Add milk, pepper, and cheese to the skillet. Cook on medium to low heat. Bring to a boil. Stir frequently, until cheese melts.
  • Add pasta and stir to combine ingredients. Cook until pasta is warm, 2-3 minutes.
  • Serve immediately.

Simple Spaghetti Sauce

Simple Spaghetti Sauce

Ingredients
  

  • 1 tbsp canola oil
  • 1 cup onion - chopped
  • 2 garlic cloves - minced
  • 1/2 lb lean ground beaf
  • 15 ounces canned low-sodium tomato sauce
  • 3/4 cup water
  • 1 tsp dried basil
  • 1/4 tsp ground black pepper

Instructions
 

  • Wash your hands and clean your cooking area.
  • Heat oil in a skillet over medium heat and add onion and garlic. Saute until translucent. Remove from pan and set aside.
  • Place the ground beef in skillet and cook ovver medium-high heat. Using a spoon, break up the ground beef into equally-sized pieces as it cooks. This ensures that all the meat cooks evenly.
  • Drain the browned beef. Add in the sauteed onion and garlic to the skillet.
  • Stir in remaining ingredients
  • Bring to a boil, reduce heat, and simmer for 3 minutes
  • Serve over cooked spaghetti pasta.
  • Enjoy!
