Sweet Potato and Black Bean Quesadillas

Sweet Potato and Black Bean Quesadillas

Ingredients
  

  • 2 medium sweet potatoes
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/3 cup cilantro, chopped
  • 1 can (15 ounce) low-sodium black beans - drained and rinsed
  • 1 cup low-fat sharp cheddar cheese, shredded
  • 4 tortillas whole wheat

Directions
 

  • Wash your hands and clean your cooking area. Clean tops of canned food items before opening. Scrub sweet potatoes with a vegetable brush under running water.
  • Dice sweet potatoes into 1-inch pieces and place in a microwave-safe bowl.
  • Microwave sweet potatoes for 5-7 minutes until fork tender.
  • Add cumin, chili powder, and cilantro to the bowl with sweet potatoes. Mash the sweet potato and spices together with a fork.
  • Assemble quesadillas: First, spread 1/4 of sweet potato mixture on half of each tortilla. Second, top sweet potato mixture with black beans and cheese and fold the tortilla in half.
  • Place quesadilla on a skillet or griddle and cook at medium heat until brown (about 2 minutes), flip and brown other side.
