Cranberry Chicken Salad

Ingredients
  

  • 16 ounces canned chicken breast, drained
  • 1 large celery stalk, sliced thin
  • 2 green onions, finely diced
  • 3/4 cup dried cranberries
  • 1/4 cup light mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tsp yellow or Dijon mustard
  • Salt and pepper; to taste

Instructions
 

  • Wash your hands, clean the cooking area and the tops of canned food items.
  • Drain the canned chicken. Add it to a medium mixing bowl. Separate with the edge of a spoon.
  • Slice the celery and dice the green onion into fine pieces. Add to the chicken.
  • Toss in the cranberries.
  • Add the mayonnaise, Greek yogurt, and mustard.
  • Using a spoon, mix all the ingredients together until blended.
  • Add salt and pepper if desired.
  • Serve with whole grain bread or crackers.
